Catherine Fontenot, PhD, RD, LDN is the director of the undergraduate dietetics program for North Carolina Central University (NCCU). Dr. Fontenot is a registered dietitian and completed both her undergraduate dietetics education and internship program at Louisiana Tech University located in Ruston, Louisiana in 1992 and 1993, respectively. Dr. Fontenot completed her Master of Science and Doctorate degree in vocational education with a concentration in adult education and training and development from Louisiana State University in Baton Rouge, Louisiana. Dr. Fontenot teaches food service management courses as well as nutrition biochemistry and food science classes. She is also responsible for recruitment as well as ensuring that NCCU students are successfully guided through the dietetics and institutional management programs.
