The Dietetic Internship Program at NCCU is fully accredited by the Commission on Accreditation for Dietetics Education of the American Dietetic Association (CADE), 120 South Riverside Plaza, Suite 2000, Chicago, IL 60606-6995; phone number 312.899.0040. This is a specialized accreditation body recognized by the Council for Higher Education Accreditation and the United States Department of Education. The program provides the supervised practice hours required to meet the performance standard for entry-level dietitians.
The Dietetic Internship Program is a post-baccalaureate, supervised practice program that qualifies graduates for the examination for registered dietitians. The internship provides learning experiences for entry level positions in Medical Nutrition Therapy. The program’s concentration area is Medical Nutrition Therapy (clinical dietetics). These experiences lead to proficiency in delivering nutritional care to a wide range of clients. Class lectures, seminars, supervised activities in the community, hospitals, and other health care facilities provide a variety of experiences for students.
Full-time students will be able to complete the Dietetic Internship Program in 45 weeks including completion of 15 semester hours of graduate credit in Nutrition/Dietetics. Although, there is a part-time option in which the students will complete the program in 60 weeks, it will not be offered in year 2009. The 15 credit hours are a component of the Dietetic Internship Program at North Carolina Central University (NCCU). The 15 semester hours may be used towards the Master of Science degree upon acceptance into the graduate program for students wishing to continue their studies.
Successful completion of all assignments and satisfactory performance of Supervised Practice Experience will enable the student to become an eligible active member of the American Dietetic Association (ADA) and to take the registration examination. The starting date for the Dietetic Internship program is August 2009. The program accepts eight students.
Developing and empowering the dietetic internship graduates to provide leadership in applying principles of medical nutrition therapy in the practice and promotion of health, prevention, and treatment of diseases to diverse and global community.
This Dietetic Internship Program (DIP) is committed to the concept that the quality of life for individuals and families can be improved through good nutrition. DIP blends theory and practice experiences that will lead to the development of students' professional skills.
The on-going review of the DIP has resulted in updated and restructured goals and objectives to satisfy the CADE 2008 ERAS standards.
Goal 1: Recruit, retain, and graduate more culturally diverse students to meet critical areas of shortages and under representation in the dietetics profession.
Outcome Measures
1. Maintain 100% enrollment of eight interns as approved by CADE.
2. Over a five year period, retain 90% of the enrolled students annually. (Previously 100%)
3. Graduate 90% of enrolled students within 150% of 11 months of expected program completion. (1.3.1) (Previously100%)
4. Over a five year period, 20% of students who applied, qualified, and were admitted to dietetic internship program will be minorities (of culturally diverse background). (1.3.1)
Goal 2: Provide a nurturing, intellectual environment conducive to learning, critical thinking, and academic success.
Outcome Measures
1. A minimum of 80% of dietetic students will agree that they are satisfied with faculty helpfulness, advisement, the smoothness of the financial aid process, and the quality of preparation for rotations and the registration examination.
2. About 70% (Previously 50%) of interns will be willing to recommend the NCCU DIP to others.
Goal 3: Facilitate students’ entry into the dietetic profession as registered dietitians, and graduate schools in foods, nutrition, and dietetics.
Outcome Measures
1. One hundred percent of the interns will score 85% (Previously 80%) or higher on the exit examination within the second attempt.
2. Over a five year period, a minimum of 80% of DIP graduates will pass the RD exam on the first attempt. (1.3.3)
3. Over a five year period, a minimum of 80% of the minority DIP graduates will pass the RD exam on the first attempt. (1.3.3)
4. At least 25% of non-Masters degree students will be admitted to, and/or complete a graduate program within 5 years of completing the DIP. (1.3.5)
Goal 4: Prepare students who will demonstrate adequate preparation to perform satisfactorily in dietetic positions.
Outcome Measures
1. Over a five-year period, a minimum of 80% of program graduates who applied for employment will secure jobs in dietetics, food and nutrition related fields within three months of graduation. (1.3.2)
2. A minimum of 80% of employers will indicate satisfaction with the quality of work performed by NCCU DIP graduates. (1.3.4)
3. At least 80% of graduates will indicate satisfaction with the quality of NCCU DIP preparation and their confidence in their ability to perform their jobs in diverse cultural contexts (1.2)
4. Within five years of graduation, a minimum of 10% of DIP graduates will hold an elected or appointed leadership position in the professional association and/or a managerial position. (1.3.4)
Goal 5: Foster student professional growth and development through participation in professional meetings, mentoring, research and experiential learning activities.
Outcome Measures
1. A 100% of interns will attend a minimum of three professional meetings at the local, state, national, or international level.
2. About 80% of research studies/projects submitted by interns will be accepted for presentation at a professional meeting on a local, state, national, or international level.
3. A 100% of the interns will be active members of the American Dietetic Association and local Dietetic Association.
4. A 100% of interns will perform 15 hours of community service or service learning activities.
5. About 80% of DIP students who participate in the mentoring program will indicate that the program enhanced their professional growth.
Goal 6: Develop and implement a DIP quality management program to enhance improvement, efficiency and effectiveness.
Outcome Measures
1. Review and update mission statements, goals, and data collection instruments.
2. Establish a computerized online survey.
GOAL 7: Review, revise, develop, and implement a Program Management Plan.
Outcome Measures
1. Identify strengths and areas for improvement as they relate to the achievement of goals and outcome measures.
2. Make corrections and develop a management plan.
3. Implement the revised policies, procedures, curriculum, preceptors, resources, program goals, and outcomes.
4. Document how goals fit into the institutional process.
North Carolina Central University is located in Durham, NC, which is recognized as the City of Medicine, USA. The internship facilities are located within the world-renowned Research Triangle Park and surrounding area with a high concentration of biomedical research facilities and universities.
Admission Requirement and Selection Criteria
Applicants to the Dietetic Internship Program must meet the following requirements:
1. Successful completion of a bachelor's degree with a GPA of greater than or equal to 3.00 (cumulative), greater than or equal to 3.00 (nutrition courses) and greater than or equal to 3.00 (biological/ physical sciences)
2. Graduate School requirements including GRE completion.
3. A signed verification statement or declaration of intent to complete program signed by the program director from a CADE-accredited/approved Didactic Program in Dietetics (DPD).
4. Official transcripts from all universities and post secondary institutions of learning showing day, month, and year of graduation
4. Completed application packet and fee. Applications will be reviewed by the Dietetic Internship Committee and will be screened based on the above requirements and the following:
o Work experience; academic honors; volunteer and community service
o Personal and/or telephone interview
o Applicant’s letter of application
o References.
The Dietetic Internship Program at NCCU participates in computer matching through D & D Digital System (www.dnddigital.com). Only candidates who have registered with D & d Digital System will be considered for the DIP at NCCU.

Curriculum and Schedule
The internship begins in August and continues through June of the following year. The curriculum is composed of the following: 1. the didactic part of the curriculum consists of three graduate courses (9 credit hours), which are completed between August and November each year:
FCSG 5130-Nutrition Through the Life Cycle (3 credits) FCSG 5160-Applied Medical Nutrition Therapy (3 credits) FCSG 5140-Special Problems in Dietetics (3 credits) 2. The site rotations are conducted from November through May and account for 6 credit hours: FCSG 5810- Dietetic Internship (6 credits)
Program Completion Requirements:
Successful completion of courses with a grade of B or higher
Completion of all internship experiences and rotations with a satisfactory rating from faculty and clinical preceptors
Participation and the attainment of a minimum grade of 80% on the dietetic internship exit examination.
Estimated Tuition and Fees
An application fee of $45.00, payable to North Carolina Central University, is required to be sent with the application materials.. Upon acceptance of an appointment as a dietetic intern, there is a one time acceptance fee of $425.50 required. The acceptance fee secures the intern’s position in the program. The application fee and the acceptance fee are non-refundable.
Tuition and fees for 2009/2010 for in-state residents of North Carolina are estimated at $4,710.00. For out-of-state residents, it is $13,044.00.
Additional costs for parking, books, housing, food, travel to sites, and attendance and travel to professional meetings is not included in this estimated amount. These additional expenses are estimated between $3,000.00 and $7,000.00.
